[Staffslug] Linux on a USB stick?

Ok, so I finally have a PC that will allow me to boot from a USB stick. I can set up a 'live' USB stick the same as a 'live' CD/DVD. Done this a couple of times over the weekend with both Ubuntu and Lubuntu (the 2nd didn't work for some reason). But, I don't want a live version I want to be able to run the distro, and it doesn't have to be Ubuntu, from the USB stick and be able to save stuff to it or alter what's on there if I wish just like HDD. The stick I want to use is only 2gb so I know I am limited hence me stating it doesn't have to be Ubuntu (or even Xubuntu). Trouble is everywhere I look it only gives instructions for creating a 'live' stick :-( Am I on a hiding to nothing with this one?
