Currently my router takes 192.168.0.1  then there are about 4 or 5 different PC's that are
assigned a random address via DHCP from the router.  Hence me plucking
a highish number out of the air.  Could I use something like
192.168.0.10 instead?

OK ignore the stuff about class B network ranges.   Just stick to your 192.168.0.0 network. ;)   Yeah check your router to see how big the DHCP pool is.  This is the "pool" of addresses that can be assigned to hosts through DHCP.  When you choose the IP for your server, make sure it's not covered by the DHCP pool otherwise there's a possible chance of IP conflict in the future.  If your pool covers the entire 192.168.0.2 - 192.168.0.254 range then make it smaller then use an address outside the pool.
