From the man page: 
-R	Descends directories recursively, changing the ownership for each
file. When a symbolic link is encountered and the link points to a
directory, the ownership of that directory is changed but the directory
is not further transversed.

 Righto, I shall give that a try tomorrow.  I didn't see the '-R' tag
 anywhere when I was searching for the answer - yes, I have spent most
 of the afternoon trying to find out myself before asking on here - so
 what does that (-R) mean?
